Pumpkin leaves are very popular in this part of the world. It is called 'UGU' in my native language. This Green coloured vegetables can be used in different ways in Kitchen Thingz. It operates in both local and continental dishes. It is one of the most consumed green Vegetable of our time. It was a bomb in this recipe. I started by giving the chicken breast enough chance to relate with pumpkin in a healthy manner, by letting the chicken breast know about pumpkin leaves health benefits.
Pumpkin leaves are low in saturated fats,cholesterol and sodium. It's also a good source of Vitamin E, A and c. The type of antioxidants found in pumpkin leaves are known as 'Alpha-Caroten and Beta- Caroten'. Which helps in slowing down aging process. The chicken breast was already marinated with honey, ginger,salt , pepper and Garlic, even before meeting with UGU for healthy introduction. My aim was to get the marinades right into the breasts inner chamber ,to avoid " if na say" because there is no hiding place in KitchenThingz, During the 30 minutes of marination, UGU was busy relating with white and red onions. Putting them through on what their nutrients are meant to work for. You need to be in a good mood to be able to relate with fresh vegetables like this,if not...why not. The cooking lasted for abouty 45 minutes ,starting from marination to when it was served. #Mbada
Ingredients : chicken breast, pumpkin leaf, pepper,honey,salt, red and white onion,water, garlic, ginger, Sesame oil,chicken broth from the first chicken stirfry. All the ingredients were used to marinate the chicken breast.
Preparation : wash the pumpkin leaf and set aside to drain off the liquid, slice the onions and set aside. With the chicken breast already marinated, all u need to do is to oil your wok and place on fire .allow it to heat up to a level, then stir in the marinated chicken breast and keep stiring with skills until it turns brown. Remove it from the wok and set aside.
Now the chicken has felt the required heat needed to get it ready for the final stirfry with pumpkin and onions. Place a fresh wok back on fire, oiled to avoid sticking. But thus time on a low heat, stir in the onion together with pumpkin leaf and keep stiring until the vegetable oil from the pumpkin leaf starts showing face, then stir in the chicken breast back into the work. Add some chicken broth to it and then stir continuously for another 3minutes and serve hot.
Note : U can also use fish or any meat of your choice.
