Roasted Chicken On Mixed Veg

INGREDIENTS For  Roasted Chicken on mixed veg :


  • 1 pd roasted chicken fillet
  • 2 large cucumber diced
  • 1 sliced in shapes
  • 1 small cabbage
  • 1 carrot diced
  • 5 spring onions..the bulb 
  • 1 rap of letus 
  • 1 garlic clove diced 
  • 2 tbsp veg.oil                                              
  • 1 tbsp cornstarch
  • black pepper
  • 4 tbsp sesame oil       
  • 1 carrot diced
  • 1 green pepper diced
  • salt to taste
  • honey
  • 3 tbsp Apple vinegar 
  • Ginger
                                                                   
                                                 PREPARATION 
Marinate the chicken fillets with sesame oil, ginger and salt before roasting. Mix all the diced vegetables together in a bowl with apple vinegar, black pepper and set aside. Mix the cornstarch in a small bowl with honey and the diced garlic then set aside .  Place a wok on a very low heat with 1 table spoon of veg oil and stir in the roasted chicken. After 2 minutes ,stir in vegetables and the sauce mixture then stir for another 2 minutes and serve healthy.

If you have  ever tried to lose weight , you will confirm that it takes a lot of effort and dedication. But if you look at it from a healthy point of view, you will find it easier than u think. If you can burn more calories than you eat, you must loose weight, but if you continue your more calorie intake and burn less or none. Your weight will not only increase, it will also put you at risk of heath crisis like '' High Blood Pressure and other heart diseases .

Calories are the energy in food. There is no doubt about the need of these energy by the your body to keep it functional . The Simple Nature Of Carrot.

Carrot is one the most simple, popular and loved vegetables that is very easy to grow,cook and to eat. It is always there for all  Kitchen Thingz....either as a main actor or a supporting one. It's is also well known in the society at large amongst old and young people. If you are a carrot fan, you will never deny the fact that it has this sweet taste and crunchy texture.

There are Over 100 different types of carrots that vary in sizes and colors. But here in Nigeria we are more related with this orange one. Carrot is not only loved because of its sweet taste and crunchy feels...we cherish carrot because it provides our body  with nutrients.

Apart from the fact that carrot provide us with Vitamin B1, B2, B6, k, biotin,fiber, potassium and thiamine . It is also a good source of strong cleansing properties that are effective in detoxifying  the liver and very effective for treating "Acne" that is caused by toxins from the blood. The vitamin A and other nutrients contained in carrot efficiently nourishes the skin, prevents dry skin and skin blemish.

Am so sure that most of the Carrot  farmers are yet to know the simple and preventive  nature of what they have been dealing with. But for those that deal on it because they knows  that it is needed for human health maintenance, more grease to your elbows.
As small as carrot is, it can prevent you from having night blindness because it contains Vitamin A that the retina of the eyes need to function well. It has also been proven that people who eat carrot very well had 40% lower risk of muscular degeneration than those who consume little.

Pumpkin Leaves On Live Chicken Breast.

Pumpkin leaves are very popular in this part of the world. It is called 'UGU' in my native language. This Green coloured vegetables  can be used in different ways in Kitchen Thingz. It operates in both local and continental dishes. It is one of  the most consumed green Vegetable of our time. It was a bomb in this recipe. I started by giving the chicken breast enough chance to relate with pumpkin in a healthy manner, by letting  the chicken breast know about pumpkin leaves health benefits.

Pumpkin leaves are low in saturated fats,cholesterol and sodium. It's also a good source of Vitamin E, A and c. The type of antioxidants found in pumpkin leaves are known as 'Alpha-Caroten and Beta- Caroten'. Which helps in slowing down aging process. The chicken breast was already marinated with honey, ginger,salt , pepper and Garlic, even before meeting with UGU for healthy introduction.  My aim was to get the marinades right into the breasts inner chamber ,to avoid " if na say" because there is no hiding place in KitchenThingz, During the  30 minutes of  marination,  UGU was busy relating with white and red onions. Putting them through on what their nutrients are meant to work for. You need to be in a good mood to be able to relate with fresh vegetables like this,if not...why not. The cooking lasted for abouty 45 minutes ,starting from marination to when it was served. #Mbada

Ingredients : chicken breast, pumpkin leaf, pepper,honey,salt, red and white onion,water, garlic, ginger, Sesame oil,chicken broth from the first chicken stirfry. All the ingredients were used to marinate the chicken breast.

Preparation : wash the pumpkin leaf and set aside to drain off the liquid, slice the onions and set aside. With the chicken breast already marinated, all u need to do is to oil your wok and place on fire .allow it to heat up to a level, then stir in the marinated chicken breast and keep stiring with skills until it turns brown. Remove it from the wok and set aside.

Now the chicken has felt the required heat needed to get it ready for the final stirfry with pumpkin and onions. Place a fresh wok back on fire, oiled to avoid sticking. But thus time on a low heat, stir in the onion together with pumpkin leaf and keep stiring until the vegetable  oil from the pumpkin leaf starts  showing face, then stir in the chicken breast back into the work. Add some chicken broth to it and then stir continuously for another 3minutes and serve hot.

Note : U can also use fish or any meat of your choice.
