Slim Potato

In this unique recipe, potato played a major role as a senior brother to other vegetables involved in this  wonderful journey,  people see potato as a comfort food. Unfortunately they eat potato in form of french fries or potato chips....even baked potato is typically loaded down with fat, cheese etc.which can contribute to heart attack .All foods are naturally healthy when  cooked the right way, ....that is why sometimes you find carrot rebelling against a chef. If you want  food to be your medicine, you must apply  the  necessary skills .Potatoes  belong to the nightshade family and it has other family members like "tomato,pepper and eggplants...off cause they will  surely have other relations...with uncountable health benefit. U can all see it in my eyes.

In this recipe i played with a combination of fish , chicken, and pork .... marinated with oyster sauce.
The  three parties agreed to work together   because  " i was very close to them and i gave them the needed attention.... it even  got to a stage where they had  to help me  choose the other vegetables .... we chose green pepper, spring onions ,carrot and coriander.

The most interesting part of cooking is  " being able to communicate with  ingredients .If you get it, you will make your food  medicinal and set your life  free from diseases and eating disorder.

INGREDIENTS.

2 potatoes
1 pound of fish,pork and fish
5 spring onions
1 tsp salt
1 tsp garlic
1 tsp ginger
1 green pepper
1 carrot
1/2 cup of water
 2 tbsp  veg oil for stir-fry:
1 tbsp oyster sauce
3 fresh pepper

PREPARATION:

Marinate the fish,chicken and pork with oyster sauce and sesame oil in a bow and set aside.
Take off the back of the potatoes and slice it into a slim shape . Wash it well until the water becomes clean, then add little salt and set  aside.Clean up other vegetables and get them ready for use  ...if you like, chop them raw..... na you sabi!

If you have a wok ....place it on a high heat and make sure that your turning stick is free and clean before using it .
Oil the wok and allow it to heat to a level then add the  ginger and stir fry until it turns brown,..add the slim potatoes and spring onions to it then stir fry  for another 3 minutes and  set aside.

If you have another wok,please do place it on another burner on a high heat  and oil it ,but if you do not have ,wash up your only wok  and use it.
Add  garlic and  the marinated combination of fish,chicken and pork,then stir fry it  gently with enough respect. Stir fry it  for only 3 minutes and set aside in a plate .

At this time all the needed ingredients are fully ready for the journey .

Oil and Place you wok back on  fire but this time on a medium heat, add chicken, fish and pork  ,and potatoes with other vegetables then add little water with  oyster sauce in the middle and  turn it well and serve hot.

Beef Cabbage


Cabbage is one of the oldest and most powerful food in the world...Do not be deceived by the price of cabbage and the way and manner some vegetable shops handle them .... .we have different kinds of cabbage and it is an annual vegetable crop. some are  Purple Red in colour ...while some are green.

Cabbage is one of the most respected vegetables.....it does not like wahala . ,it relates well with every other ingredients ...no mater the recipe.
Cabbage can provide you with some very special cholesterol lowering benefits if you cook it well. .Raw cabbage also have cholesterol lowering ability but not like the  steamed or stir-fried cabbage.

Cabbage is one of the coniferous  vegetables...(.cabbage ,cauliflower,broccoli .)they are.more like cousins. These vegetables contain Vitamins , Minerals and  other nutrients  known for fighting  and preventing  cancer and other heart diseases.

If u know all the health benefit of cabbage ,you  fit consider changing your name to cabbage.
In the kitchen, Beef cabbage recipe, is a combination of beef steak and green cabbage ,paired with green beans in an orange flavored sauce.A five star recipe . I love food and i eat only when am physically hungry. I understand that bad eating habit has eating very deep into our society today but i strongly believe that with this healthy recipe, we can begin to learn how to eat healthily,

INGREDIENTS:



  • 1 pound beef steak.

  • 1pound cabbage (green).

  • 4-5 green beans.

  •  4spring onions.

  • black pepper.

  • 1 tbsp corn starch.
  • salt to taste.

  • fresh orange(2)

  • fresh ginger 1 tbsp diced

  • fresh garlic  1 tbsp diced (2 cloves)

  • sesame oil 2 tbsp

  • dark soy sauce 2 tbsp

  • 2 tbsp veg.oil for stir-fry


Preparation: shred the beef into small sizes and marinate with salt ,,diced ginger and set aside cover for at least 15 minutes  As the beef is marinating ,prepare your sauce and vegetables. for the sauce mix together the " dark soy sauce,sesame oil  and set aside. clean up the green beans ,cabbage spring onion ans set aside.
mix the corn starch with 1/2 cup of water and set aside. Squeeze out the orange juice from the fresh oranges and set aside in a cup.dice the garlic ginger and place your wok on a high heat.
 ,you will understand the different between capital B and a GOAT LEG.

Add the oil to wet the wok making sure it get round the wok,add the marinated beef and stir until it turns brown, then remove from the wok and set aside.Wash  the wok and place it back on fire, make sure it dries up  before adding a table spoon of oil ..if not you will have your self to blame, am talking from experience,add the garlic into the wok and stir until it turns brown, do not allow it to burn..cook on low fire if needed ..... because na you de control am. pour the beef into the wok and stir with the garlic for about 2 minutes then add some  water to it,  add the green been, and then  stir for another 3 minutes, until the beans gets tender, then add cabbage and spring onions.Add salt and pepper to taste. Stir gently for another 2 minutes  then add the more orange juice, mixed sauce and cornstarch in the middle of the wok ,mix together and serve it hot with  rice or boiled potato.  Don,f forget to share you wonderful experience with us .Tanks for being here.

Ileke In The Kitchen.

 What is he doing in the Kitchen with two African Queens.  IYAWO ILE AND MAMA LEPOP.
Lovely names i must confess.i was a bit worried when they came because i did not have Amala and Ewedu on that day.
According by Ileke he did not come to eat ,he only brought his ladies to meet with  Chef Valicci  . At first ,i did not believe him.but  waited to see the ladies reaction  ,i noticed he was busy telling them things about me and my food... all in Yoruba language.

  The only thing i was able to pick from all he said was"ODE LO LIKE"
when i asked of the meaning, he said ''i should ask Olamide .
In the kitchen Chef Valicci is always on his toes,he never get distracted...he is in charge at all times.
As for IYAWO ILLE AND MAMA LEPOP,they were so submissive to ILEKE the man that brought them to the kitchen, they stood by him as if i was about to take them away from him.But God knows that i have no such plans, maybe the food did, but as for me , in the Kitchen, there is no hidden agenda,
Iyawo Ile and Mama lepop,were skeptical seeing all my cooking ingredients and utensil ,they whispered something to Ileke ,which i never bothered to know.

I did not find it difficult making their food ,as they mean to eat the same thing.
They wanted  PASTA Dish , with Vegetable and fish..according to Mama Lepop she is a Pasta person.
They watched me make their food step by step...i had to beg Iyawo Ile to help me take off the fish bone from the fish and she was pleased to do so.

They wanted almost all kinds of vegetables present on that day but i made them understand that using all of it to make their food is not a problem,but that some of this Vegetable need to have a personal relationship with them,Veges like Cauliflower ,leak, Asparagus and co.
They did not get it at first, but when i asked question like " have u ladies eaten Asparagus before"? their answer was Asparagus ko... .Asparagus Ni!

chapter closed... i continued with the cooking....as the cooking was going on, i overhead Ileke telling them that the secret of his Young and Gallant looks is Chef Valicci's food and Daily exercise ,
what a wonderful combination , CHEF VALICCI +DAILY EXERCISE  = HEALTHY LIFESTYLE.

After all said and done, i served the food as usual, to my greatest surprise....Iyawao Ile and Mama Lepop refused to touch the food,claiming that it is does not look tasty to the eyes .'' WOMEN AND THEIR EYES WEY DEM DE TAKE SEE PASS DEM SELVES .''
But to my surprised , from tasting.... they wipe the plate and insisted that i must tell them the name of the delicacy .
I shifted the naming Ceremony over to Ileke and he called the food "PASTA JAMBALAYA"

He Played a Fast One On Me.


We argued as usual …but I never knew he had plans of taking the food away from the kitchen. Or was I not vigilant enough? I believe I was busy trying to make the best out of what I have in the kitchen. Or can  it be in retaliation of what happened in his birthday party? Anyways…. Mugu Fall Guy Man Chop....( if meat are go today,tomorrow are hunter).

April 19th Kitchen Thingz

April 19th  is Garlic Day.....Garlic is both food and medicine in many cultures .People have been enjoying garlic even before the war.I am even thinking of suggesting garlic attack against the Bokoharam. But. my fear is that most of our politicians will not support the Garlic attack because they will not be exempted from the wroth of garlic against the smelling wickedness and suffering of our people..  They have the same wicked heart as the bokoharam people if not "we for no de cry for power , Electricity". In the kitchen i consider garlic as a power food.some times i call garlic "my oga at the top'' because of the way it relates with other ingredients  in the kitchen.Garlic does not step on any ingredients toe.. despite the power and the ability it has when it comes to overshadowing  ingredients with its unresistant flavor. Garlic is a member of the onion family ...a first cousin i believe and also a senior to them..even though it is one of the smallest in size.i am yet to find out if the bad native doctors use garlic...please don't be scared to tell me if u know .

The smell of garlic has  been making waves in this part of the world .personal i have settle quarrels rising from the smell of garlic so many time,s..i have seen relationship broken due to the smell and use of garlic...in the kitchen ,some people will be like " please chef i don,t want garlic in my food and at the end of the day ... they will eat and leek-up their plates without complaining of  eating or seeing garlic in the food.
I am not saying that i do force people to eat what they did not want to eat but the truth is that ,many of us don,t really care about the health benefits of the food we eat ,all we know is the name and location  of the food house .
in those days ..the idea was ton eat plenty of garlic for all its health benefit .

I also heard that the presence of garlic scares witches and wizards, but am not sure yet.... until i have witch or wizard as a guess then i will let you guys know if it is true.Thank you for being here.

How Will You React If Your Husband Decides To Be Cooking For Himself.

In Nigeria, the kitchen is said to be the woman's main office ..it is said that the woman education ends up in the kitchen..but this time Mr okoye thinks otherwise.
He came in early from the market  on that precious day ...called his wife into his bedroom,sat her down and says to her quietly,  from today  i will be cooking for himself......that no one should border cooking or serving me any food in this house anymore..
His wife did not find it funny ...... 

Is there anything wrong with Mr Okoye?

Chef Blade In Valicci Kitchen Thingz


It was on a Thursday afternoon after the cleanup...i was doing the normal cleaning and getting ready to go for shopping as Chef Blades works as if he was running after something  important not knowing that hunger  was responsible for his unexpected visit knowing that he must find something  good to eat in the kitchen.
Chef Blade is a wonderful chef who believes so much in culinary ethics that he never stops using those kitchen terms, he started by asking me after my sous chef of which I do not even have one, so I pretended not to understand the word sous until he made it clear by saying my assistant chef…and I was like; ok, he is not around.
As an experienced chef that have handled different kinds of hunger I was able to understand Chef Blades’ moves in the kitchen but I allowed him to suit himself first.
Looking into his eyes he was seriously and physically hungry so it touched my heart to heal him from his hunger but he was still busy laying complain of how my cutleries were not properly placed in the kitchen, how hot it is in the kitchen and threatened to use his handkerchief as It is against the culinary ethics, but for me I am in the kitchen and   I relate well with all my utensils, they know me as I know them, they feel me as I feel them.
Though I have a special feeling for my chopping board because that’s where all the vegetables in the kitchen get to meet before landing into the wok.
I was shocked to hear chef blade ask me where I got trained …seeing the anger from hunger in his eyes as he went on top of his voice and pronounced that he is very hungry, that he actually was coming from a long journey with a friend who dropped him off to go and get some money from the ATM machine nearby. The truth of the matter finally came out , all the forming as per culinary ethics and heat in the kitchen went down with the truth.
 He sat down quietly as I began to call on my utensils and few of the ingredients I have in the kitchen to bear with chef blade and consider his level and kind of hunger and they understood him clearly but for carrot that took time to accept the pleadings.
Then the cooking starts.
All I had in the kitchen that day was about 2 cucumber, 2 carrots, 3 spring onions, one whole apple, garlic and ginger, 1 egg, coriander, as I reached for my wok Chef Blade’s friend came into the kitchen complaining
to Chef Blade quietly as he failed to pull money from the ATM machine.. *double wahala for dead body*
His friend is an engineer, a slim dark skinned guy …according to him ..He likes Kitchen activities but he feels lazy to eat. We share views on eating habits and the impact of healthy and unhealthy eating habits in our society as the cooking went on.
Chef Blade got up to question what I was cooking with the little but no  ingredient he saw… but the truth was that I was after getting him back to normal with the right nutrient  as it is the essence of eating.

In the next 15minutes the food was almost ready ,chef blade was amazed with the end product as he began to think of what to name the food …I was equally glad that finally I made something that was appreciated after all the talks  in the kitchen.
