Noddles need no introduction,it's as popular as boko haram.It is one food that saves lazy and hungry people from untimely death. If i have my way, i will extend the cooking time to 1 hour. It is a staple food made from some type of unleavened dough,which is rolled flat and cut into shape and very healthy.... if it is well cooked. "hunger no know this one ooh".In this recipe , coconut milk played the role of a mother, while peas,carrot,celery and Chinese lettuce acted more like the home girls.The relationship between garlic and ginger was also shown here with style... "as the two both of them" agreed to step aside during marination..
The beef involved in this recipe was a bit reluctant until it saw me, thank God am a celebrity chef that respects the relationship between man and food. I marinated the beef in a bowl with red wine,black pepper,salt and onions for almost an hour after cutting it into slim sizes.
As for the noddles,it was already aware of what was about to happen... i broke it into pieces, to ease the stress of noddles control..."if you see some people where them dey eat long noddles...you go see say food dey send man message" and most of us are yet to master the skill. At the same time it was pleased to see some foreign food stuffs showing interest in the recipe.After breaking the noddles, i put it to boil in water with a little oil added to keep it separated from each other.."to avoid gumming body" for 5 minutes. Then i washed it until the water became clear, before leaving it in a sieve to drain out the water and become dry.
As for the vegetables, washing and cutting has already taken place on my most loved cutting board . While cutting this vegetables, i made sure that my knife was well sharpened and clean. It is better to cut fresh vegetables with clean and sharp knife to free them from political pain. My wok was ready with a table spoon of veg oil that serves as cream before adding the marinated beef on the high heated wok. After adding the beef, my turning stick steps in as usual... leaving no beef un-turned to avoid unnecessary burning beef... not until it turns brown and set aside.
Having vegetables like: carrot,celery,spring onions, Chinese lettuce,peas and rice vinegar.... encouraged my second wok to ginger up for the final stir fry.But this time on a medium heat, i allowed garlic and the ginger to go in first before adding spring onions and noddles.The noddles called for Continuous stir fry to be able to relate with the vegetables, trust me...i did not stop until it was time to add the slim reluctant beef. Guess what ! my turning stick was over powered by the health benefits of the this food .That was why i let in the vegetables and the mixture of coconut milk, black pepper ,sesame oil, half tea cup of water and served hot.
